Drop 01: The Story

Behind our first limited seasonal release — strawberry meets lemon verbena.

From the beginning, we knew Root Cellar wouldn't just be a core line. The core — Digest, Calm, Glow — is the daily ritual. It's what you reach for every morning. But alongside the everyday, we wanted something that felt special. Limited. Worth waiting for.

That's the drop model. And Drop 01 is where it begins.

Why Drops?

The beverage industry operates on permanence. Brands launch products meant to sit on shelves indefinitely. SKUs multiply. Everything is always available, everywhere. The result is a sea of sameness — hundreds of bottles competing for the same space, none of them feeling particularly special.

We looked at a different industry for inspiration: fashion. Seasonal collections. Limited runs. The anticipation of a release date. The understanding that when something is gone, it's gone — and that scarcity creates meaning.

Root Cellar drops are quarterly seasonal releases. Small batches. Story-driven. Built around an ingredient pairing that only makes sense at a specific time of year.

Strawberry Meets Lemon Verbena

Drop 01 started at a farmers market in early spring. Fresh strawberries had just come into season — small, deeply fragrant, nothing like the oversized supermarket variety. At the same stall, bundles of lemon verbena were piled next to the herbs. The grower mentioned they pair well together.

We took both home and started steeping. The first batch was too sweet — the strawberries dominated everything. The second batch dialed back the berry ratio and let the lemon verbena take the lead. By the third iteration, we found the balance: a delicate citrus-herbal base with just enough strawberry to add color, sweetness, and depth.

The result is unlike anything in our core line. Where Digest is warm and grounding, and Calm is soft and floral, Drop 01 is bright, aromatic, and unmistakably seasonal. It tastes like the exact moment when winter ends and spring begins.

Small Batch, On Purpose

Drop 01 is a limited batch. Not because we're manufacturing scarcity — but because the ingredients are genuinely seasonal. Those strawberries are available for a narrow window. The lemon verbena even narrower. When the season ends, so does this particular expression.

Each jar is marked with a batch number and the source farm. When you hold Drop 01, you're holding something tied to a specific place and a specific week in the growing calendar. That's not marketing. That's just how seasonal food works.

What Comes Next

Drop 01 is the beginning of a pattern. Every quarter, we'll release a new seasonal water built around whatever is growing, fresh, and inspiring at that moment. Some drops will be familiar flavor combinations. Others will push into unexpected territory.

We're already testing ingredients for Drop 02. We can't say much yet — except that it's going to lean into summer in a way that feels completely different from this one.

For now, Drop 01 is the story. Strawberry and lemon verbena. Spring in a jar. Available while it lasts.
