At Root Cellar, we source our ginger from small farms in the Hudson Valley, where the cooler climate produces roots with a more concentrated gingerol content. Gingerol is the bioactive compound responsible for ginger's characteristic warmth and most of its therapeutic properties.

Unlike commercial ginger products that often use dried or processed ginger, we work with fresh roots harvested within 48 hours of our cold-steep process. This preserves the volatile oils and enzymes that make fresh ginger so effective.

The Cold-Steep Difference

Heat extracts flavor quickly, but it also destroys delicate compounds. Our cold-steep method takes longer — 24 to 48 hours — but the result is a cleaner, more nuanced ginger water that retains the full spectrum of beneficial compounds.
